Could someone please explain why the hot water doesn't just pass straight through this manifold and bypass the smaller radiator pipes? Is there a splitter running down the middle of the manifold? Does this mean its a single circuit system?

It is obviously a manifold that much is certain. I have never heard of a single pipe system manifold but if such a thing does exist then yes I image there is some sort of baffle/splitter internally, otherwise like you say you would have a dead short and just be circulating straight back to the heat source.
 
It’s definitely two pipe one flow other return worked on one a few years ago from hemeory one end is flow other return so sealed at centre of manifold
