I've been told to stick with the same power as it's simple to replace but I struggle to find 7.2kw showers and I was wondering if a 7.5kw shower has the same cables?

Yes you will find 7.5 is the max but average is around 6.9-7kw on the instructions

When replacing a shower, it's bad practice to just assume that the existing wiring is okay. The sizing and protection/bonding should be checked against current regulations, insulation and resistance measured and recorded. If in doubt, consult a qualified electrician.
