Heard someone recommend angle grind to channels the width you need then SDS with chisel bit to remove the middle. Is that a good idea?

Angle grinder on the width (you can even hire grinders with a double blade and connections for dust estraction) has worked well for me, but is very dusty if you don't have a means of connecting your grinder to a vacuum. You'll need a diamond disc as the conventional 'stone' discs last for about two bricks.

A Scutch hammer to remove the middle sometimes works just as well or better than SDS.
 
Wall chaser and dust extraction unless it’s a new build and dust doesn’t matter
