got to connect up to old steel pipe, it looks like 3/4 pipe to me.

what is the best option to connect to? copper? plastic?

any help would be great

Replace with MDPE , Confirm steel with magnet. Lead will scratch easily. If lead, use lead lock as coupling. If steel, best to find threaded coupling but take care when uncoupling not to unscrew any part of pipework you wish to retain.
 
its deffo steel, mdpe conects to the steel pipe? or do i need to get an iron to fit?
 
If you can find a joint remove and use a male or female iron or cut pipe and use a philmac trans coupling
