Do I need to have gas safe to carry out a flue gas analysis? Someone has told me that this is ok since i am not disturbing a gas fitting

you would be working or making a judgement on a gas appliance, if not gas safe how can you prove you are competent to do so

The last person attending a gas appliance is responsible for this. If you tested the flue gas but, for example, failed to notice that the termination was too close to a window and the occupants died from carbon monoxide poisoning you would be liable as you would have been expected to have observed this.

This is one reason why the regulations are there - to protect you and the customer.

you need to be gas safe and you need cpa1 without either of them you are breaking the law

NO NO NO NO NO

you need your gas qualifications to work on boilers as well as a gas safe registration, we had to pay £150 odd just to do the CPA1 course. Whoever told you that is wrong

You have not explained how you are qualified to interpret the results of a flue gas analysis, neither do you explain how your 'customer' could be expected to take any notice of your findings.
Registered operatives have received training and been assessed on the use of a flue gas analyser. Their actions, based upon the testing of an installation, are subject to the Gas Safety (Installation & Use) Regulations 1998 and as such could be subject to scrutiny by Gas Safe Register or HSE in the event of an incident.
Leave it alone and refer to a Gas Safe registered operative.

You need to have a minimum of core gas safety and boilers. After next year, I think it is April, you also need to have CPA1 (Combustion Performance Analysis).
