ferroli maxima 35c

hi all this is my first post .
im having trouble with the hot water as it keeps going to hot for a couple of mins then goes lukewarm then back up again repeatidly
also phoned ferroli (40 min wait) and the guy told me the air seperator would have dirt in it checked all still no luck
any help please
