So a strange conundrum regarding water temp if anyone can help resolve, would be much appreciated. Ive tried to give as much info as possible to give a full picture but let me know if ive missed anything.

I have a Baxi Avanta 25h heat only boiler. Works fine.
Unvented 300ltr megaflow. Stated as 40mins recovery time. I have the water heat on for 2 hrs at night when there is next to no demand from the central heating i.e. boiler can focus just on water heating.
UFH both upstairs and down. 3 towel rads only in bathrooms. Heating throughout the house works perfectly. Issue is water.
Boiler has a setting for hot water and central heating temp (P1 & P2 settings). Ive set the central heating temp to 55 degrees which works a treat. However the setting for the hot water does not seem to work and instead essentially follows the central heating temp. Ive tried experimenting with setting the DHW to 30 all the way to 65 edrees but makes no difference. It only gets hotter if I raise the temp of the central heating? All moterised values seem to be working correctly. The stat on the boiler is set to max.
Im trying to run the system as efficiently as possible and therefore have the central heating quite low at 55 degrees (as its essentially on a quite allot of the time). But we need hot water. Water does get hot but not fully like it should after 2 hrs of heating.
Am I missing something? Is the boiler settings and therefore the boiler not working as it should? Im flummoxed.
 
I believe they used to have a hot water diverter kit like a motorised valve and hot water sensor for the pocket of the cylinder so the boiler could tell what the temp was and made use of the dhw settings
