Hiding pipes and plumbing in shower

Hi I've taken out my bath and want to fit a shower tray and cubicle... Is it a big job to get the pipes put under the floor boards and then plumb a shower in?

A decent plumber will pop round and quote/estimate

If a shower installation the piping needs raising up I'd have thought..??
