Right, basically i have my sink in the middle of my side & the tops in the center as i have a middle drain also. This has left me with a 2" strip of side behind the sink area which is causing me problems. Whenever i turn the top off with wet hands or when doing the pots & want to turn it on to rinse the pots, water splashes onto the 2" surface area. I have sealed it countless times but the seal breaks after a while & water is starting to warp/flake the back edge of the side.

My question is, is there anything like a hollow half moon or some of that tape you use with a plastic surface with a score down the middle you put around your bath tubs in staid of the sealant solution that would allow any water splashes to drain off back into the sink area & not settle onto the side? The biggest tape size i have seen is barely 2" wife & id need it at least 3" or more to create a slope for the drain off.

Has anyone got any idea's or advice?

Silicone should seal it, however if the side has already started to show signs of water damage then it'd be difficult to get the area completely dry for the Silicone to take and cure properly.

Try getting it completely dry, then use a good sanitary sealant (such as Dow 785) and leave it for 24 hrs before letting it get wet.
