I've just taken out the nozzle on the appliance trap adaptor for the washing machine, but am left with a gap in the pipe to plug. Is there some sort of screw-on cap for a 50mm pipe?

Yes just take it to merchants and show them the pic. Either swap for another trap or just blanking plug and stopend.
 
Why can't you re-place the nozzle and just fit a cap on the end, they usually come with a internal or external cap.
 
provided you have kept original nut and rubber olive you can buy another spigot for the trap
that has a sealed end[you only cut it should you want to fit a new washing/dishwashing machine]:)regards turnpin
