If i remove with heat an old end feed joint, leaving me with a silver end to the pipe, can i still get a good reliable seal using a new soldered joint onto the old solder?

yes best to wipe excess solder of the pipe while still hot so you can get the new fitting on what youve done is describes as tinning some thing we used to do a lot when joining lead and copper
 
heat remove wipe with flux brush then flux fresh and rejoin as usual
 
Yer dont it many times do as advised sweat excess off damp cloth or flux still clean and flux and insure full engagement.
