what is it with new builds and thermal stores

my company recently got a contract for a hotel/hostel which has thermal stores in all the 2 bed appartments
according to the contractor they were the most suitable system because combis cant service more than one hot tap at a time.
Now the manager cant understand why if you run more than one hot tap the hot water runs out quite quickly, or if you run one tap for an extended time the hot runs out

and this weekend got a private job for a lady whos just moved into a 1 bed flat that has a thermal store heated with an electric immersion,
this thing to transfer the heat to the water has a massive plate heat exchanger strapped to the side. she can barely do the washing up before the hot water runs out, it goes from scolding to tepid in 5 mins

somebody tell me some good points and benefits of thermal stores because i'm developing a loathing for them
 
Thermal stores are only beneficial if you have more than one heat source
The idea is to keep it hot all the time for it to be of anyway efficient
So good for stoves ect
Yes it be good for ufh as its running at a lower temp so not starve the hot water as much
Would I put one in my own home not a chance
 
Sounds like the stores are too small, and can't bank sufficient heat for the demands being put on them.

Well insulated and very well suited to UFH and another heat source.
